Cosmic Zeal

Mild Ale with Orange Peel and Cacao Nibs

The craving, the impulse. To beget, to be made manifest. To transfix your elements. To transmute them unto a greater whole. Vicious desire. Cosmic zeal.

This is our inaugural brew, conceptualized as our core beer. As such, it is the herald of spring.

Gentle aromas of freshly roasted cacao nibs (courtesy of our friends at Flow Cacao) intermingle with specialty malts from one of the oldest malting plants in the world (Castle Malting, procured by the wonderful true.beer). Orange peel completes the alchemical formulae to give rise to an experience like no other.

All this at a mere 3.7% alcohol.

Caveat Emptor

Gose with Roasted Peppers and Samardala

Unprofaned to the tongue of man and with diligence imposed, the conjurer’s libation is cast with the carmine and grass fruits of the Mother. The harvest shrieks: Caveat emptor!

Our second brew is both a celebration of the harvest season, and an homage to one of the most Bulgarian manifestations, namely, the aroma of freshly roasted peppers at the end of September.

This time, we bet on malt from Weyermann in Bamberg, a region with centuries-old beer brewing traditions. The style is gose, a refreshing beverage that owes its taste to a slight acidity, traditionally supplemented with salt — itself here expressed by another Bulgarian ingredient, samardala.

Meadow Rites is a modern interpretation of one of our favorite styles — the classic Belgian wit. Besides the traditionally added ingredients of coriander and orange peel, we’ve also included a dry-hopping with Centennial. The result is an explosion of aromas and flavor, a full-bodied yet refreshing beer that will reignite your passion for wheat beers if you’re already tired of weissbiers.

Cream Ale

Hand of the Philosophers is our offering to the worshippers of light and easy-drinking beers for late summer evenings. No, it is not a lager, but the quintessential lawn mower beer — a cream ale. Its lightness is achieved by the addition of both corn flakes and rice flakes.
